This is a wonderful light summer recipe. Choose
whatever salad you fancy to go with it – I picked salad leaves and herbs
straight from the garden. The quality of the eggs make a big difference. I am
lucky enough to have a neighbor supplying me, but try and get not just ‘free
range’ but good quality free range wherever possible. Feel free to add more
cheese as well. I use Goats cheese to keep it cows-milk free, but feta is
delicious, albeit a very different flavor.
I made half this quantity in a small-ish frying pan
and it worked fine. In the future I will also make double and aim to take it to
work for lunch the next day, but I haven’t tried that option yet.
Potato, spring onion and
cheese frittata, served with summer salad
Serves 4 (easily halved)
Preparation: 5 minutes
Cooking time: 20 minutes (longer if you need to
boil the potatoes)
Cost: £4.27 (£1.07 per serving)
2 tbsp olive oil
400g cooked new potatoes, or about 525g of raw
potato
4 eggs, beaten
4 spring onions, finely chopped
1 bunch dill, roughly chopped
50g cheddar (or a cheese of your choice), grated

– 4 medium tomatoes, 10cm of cucumber, mixture of salad leaves

dressing (optional)
Chop
the potato into bite-sized chunks. If the potatoes aren’t cooked, boil them
them first (this will take between 8 and 12 minutes depending on the size of
chunks you have used).
Heat
the oil in a small non-stick frying pan on a medium heat. Add the potatoes,
then fry until they begin to crisp (about 8 minutes). Meanwhile chop the salad
items up and toss in a bowl. Dress the salad if desired (try using extra virgin
olive oil, balsamic vinegar and honey).
Whisk
the eggs, spring onions, dill and salt/pepper to taste in a bowl. Turn on the
grill to a medium heat.
Add
the egg mixture to the frying pan. Mix quickly, lower the heat of the pan then
sprinkle over the cheese. Cook for about 8 minutes on a low heat until the top
has almost set. Place the frying pan under the grill for 2-3 minutes until firm
and golden.
Serve
straight away with the salad and mayonnaise/ketchup. Alternatively this can be
cooled and chilled for up to 24 hours.

bottle/packet of that product.
